Rainy Day Green Bean Casserole.

Today is the first day of rain from hurricane Nicole and we are spending it resting and eating yummy homemade food. I blanched and froze green beans all Summer long for this Winter and I won't lie, that green bean casserole sure hit the spot!


Here's how I made it:


  • One gallon-sized bag of frozen green beans

  • One can cream of mushroom

  • One can cream of chicken

  • 2 onions sliced

  • Panko bread crumbs

  • 1 cup shredded cheese

  • Two cans french fried onions

  • Salt + Pepper + Soul Food Seasoning


First I sauteed the green beans until they were good and cooked down. While they cooked down, I sliced the onions, tossed them in the Panko Bread Crumbs, and then placed them on a cooking sheet at 450 for 20 minutes.


I then took the green beans out of the pan and spread them in a casserole dish. Next, you pour the cream of chicken & mushroom over the green beans. Add soul food seasoning until your soul says stop (Around 1 tsp), and add salt and pepper to taste.


Next throw in your cheese to the mix along with 1 can of the french fried onions. Yep, mix it in with the green beans. Once all that's mixed, get out your onions from the oven and pour them over the top along with the other can of french fried onions. Then place it in the oven @ 400 for 10 minutes.


There ya have it! My lazy rainy day green bean casserole!
